Thanks for telling us about this. Very interesting! The way you describe the approach to winemaking in France is the way it has been described to me by my friend Herve, who makes champagne in the Aube. "We make the champagne as good as it can be for ourselves to enjoy," he says. "And then what is left over we can sell."<br />

When will you be back in Paris? And when can we buy your book? Can't wait!!!<br />
